Rise and shine! Let’s get the day started with a fresh loaf of banana bread and put those overly ripe bananas to use.
Banana Bread
INGREDIENTS
Wet
- 2 eggs, room temperature
- 1/2 cup butter, softened
- 1/4 cup buttermilk*
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 3 bananas, mashed
Dry
- 1.5 cups all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp salt
DIRECTIONS
- Preheat oven to 350°F. Grease your loaf pan with butter.
- In a mixing bowl, add all of the dry ingredients (all-purpose flour, baking soda, and salt).
- In another mixing bowl, cream butter and sugar. This step takes a while, mix the butter and sugar until the mixture turns white and fluffy.
- Add eggs to the wet mixture. Then, add vanilla extract, buttermilk, and bananas.
- Combine the half of the dry mixture to the wet mixture and mix. Once combined, add the rest of the dry mixture and mix.
- Pour batter into the loaf pan and bake for 50 min at 350°F.
- Once done, let your banana bread cool for about 10-15 min. Then, enjoy with a fresh glass of milk!

*NOTES:
To make buttermilk, add 1 tsp of vinegar or lemon juice to a 1/2-cup and fill the rest of the cup with milk. Let stand for 5 minutes before using.
This recipe is super flexible, so feel free to add in nuts or chocolate chips. This banana bread is on teh sweeter side, so it’ll be best to use semi-sweet or even dark chocolate chips.
