What to do with Steel-Cut Oats??? Banana & Chocolate Chip Cookies!

Have you ever mistakenly purchased steel-cut oats over rolled oats or quick oats? Well, your girl has and she has done it multiple times. However, THIS time, I accidentally purchased a giant bag of Bob’s Red Mill Steel-Cut Oats from COSTCO!

I did not have the heart to return it to Costco, knowing that they toss out returned food regardless if it has been opened or not. So that brings us to an oatmeal cookie recipe! This oatmeal cookie recipe is soft, fluffy, and tastes like a muffin in cookie-form. This recipe is quick and easy to make that I was able to get this done during my 1-hr lunch break as a WFH analyst.

Most oatmeal cookie recipes call for rolled oats or quick oats, where there is not soaking necessary for the oats. Since rolled/quick oats are already steamed and rolled, they absorb liquid easier than steel-cut oats. This require us to soak our steal cut oats to achieve similar consistency.

Banana & Chocolate Chip Steel-Cut Oatmeal Cookies

INGREDIENTS

Wet

  • 1 egg, room temperature
  • 1/2 cup butter, softened
  • 3/8 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/4 tsp vanilla extract
  • 1/2 banana

Dry

  • 1 cup all-purpose flour
  • a pinch of baking soda
  • 1/4 tsp salt
  • 3/4 tsp cinnamon
  • 1/8 tsp nutmeg
  • 1/2 cup steel-cut oats
  • 1/2 cup chocolate chips

DIRECTIONS

  1. Preheat oven to 350°F.
  2. Soak the steel-cut oats in 1 cup of hot water for 1-hour. It can be left for longer and the oats will still be fine.
  3. In a mixing bowl, cream the butter, brown sugar, and granulated sugar together until well mixed.
  4. In another bowl, mash the banana.
  5. Add the egg, smashed banana, and vanilla extract to the rest of the wet mixture.
  6. In a separate mixing bowl, combine all of the dry ingredients EXCEPT for your steel-cut oats and chocolate chips.
  7. Pour in half of your dry mixture into the wet mixture and mix well. Then, add in the remaining half of your dry mixture. This prevents your dry mixture from getting everywhere.
  8. Add in your steel-cut oats and chocolate chip and mix with a spatula.
  9. Add your cookie dough in 1-inch rounds to a baking sheet and bake for 10 min at 350°F.
  10. Once done, take out your cookies and let them sit for another 20 min. Your cookies will seem soft once taken out of the oven, but they will firm up as they cool.
